CRICKET FAJITAS
What
1 Red onion
1 Red and yellow bell pepper
1 Lettuce (we used little gem)
1 Fresh red chilli
2 Cloves garlic
30g Crickets
½ tsp Smoked paprika
½ tsp Cumin
½ tsp Chilli powder
Half Lime
Handful of fresh coriander
Olive oil

1. LEAVE IT YEAH
Soak the crickets in water and set aside.
Mix smoked paprika, cumin, and chilli powder with finely chopped garlic cloves and half lime juice, and set aside.
2. FRY LIKE YOU MEAN IT
On a medium to high heat fry the chopped pepper and onion for a few minutes until they start to soften. Then add the soaked crickets, spices that you set aside and chopped coriander and fry until the vegetables are cooked. Make sure they don’t get too soft, there should be some crunch!
3. WRAP IT
Serve the filling in a warm tortilla wrap with lettuce, salsa, sour cream or plain yogurt, and a dirty little sprinkle of cheese.
