SMASHED AVOCADO TOAST WITH CRICKETS


Delicious take on avo toast. Toasted sourdough with smashed avocado, red onion, coriander and edible insects.

Quick, fresh and delicious – this ultimate classic is perfect as a meal, snack or literally any occasion!

INGREDIENTS


For the crickets

1 tsp olive oil

black pepper salt


For the avocado

1 avocado

1/2 lime

salt and pepper


For the toast 2 thick sourdough slices

1 garlic clove

1 tbsp diced red onion

1 tsp chilli flakes

coriander



METHOD


PREP THE AVOCADO

Scoop the avocado into a bowl and smash with lime juice (1/2 lime), salt and black pepper.


TOAST THE CRICKETS

In a large frying pan, heat the olive oil (1 tsp), then add the crickets (15g), and season well with black pepper and salt to taste.


Fry for a couple of minutes until the crickets are well coated and crispy, then tip into a bowl and set aside.


PREP THE TOAST

Toast two slices of sourdough.


Once toasted, halve a garlic clove and rub the garlic on each slice of the hot toast. This cooks the garlic a little and releases a ton of fragrance and flavour.


Put a good dollop of smashed avocado onto each toast and top it with the crickets.


Garnish with red onion, coriander, chili flakes and a good drizzle of olive oil.
